Peaches! We got to go peach picking for the first time last season, and the orchard in my meditations all year has smelled exactly like that day. This season we’ve been out to pick sweet cherries, blueberries, and black raspberries – each berry a magical thing. But peeeeaches!! They are fuzzy. You can pet them while they ripen. And they smell soooo good:) So a big juicy burst of gratitude this week to all the orchards that are keeping on growing, and best wishes to you for a good week ahead.

Spiced Peach Bowl
Slice 3 peaches and a red onion into wedges. Drizzle with a bit of olive oil and a pinch of salt. Toss and roast at 350 for 20 min. Or grill them! Let cool.
Slice a cucumber and 2 ripe tomatoes into wedges (or cut 2 C cherry tomatoes into halves). Put those in a bowl with a handful or torn basil, maybe a few leaves of mint…a bit of parsley if you prefer.
Add the red onions/ peaches and some cooked quinoa or torn, toasted bread pieces. Toss toss with just a splash of some white balsamic.
Or try with cinnamon vinaigrette:) Cinnamon Vinaigrette: 1/4 C olive oil, 1-2 T apple cider vinegar, 2 T dijon, 1-2 T honey, 1/2 t cinnamon, pinch of salt. Taste, adjust 🙂
